When plans surfaced in April for Allora and Arrosta, a pair of sophisticated new Italian restaurants dreamed up by Maverick Texas Brasserie, details were lacking.
Now we have more.
In April, we knew that the full-service Allora restaurant would be overseen by Chef Robbie Nowlin. However, what has just been confirmed is that Chris Carlson will be splitting his time between his current role as Maverick’s executive chef and overseeing the more causal counter service Arrosta.
Maverick sommelier Josh Thomas will also contribute to the new restaurants, which will host wine programs for the two. Thomas’ talents are the source of Southtown Brewery’s highly regarded wine program.
Allora will be housed in the new Credit Human Tower at 403 Pearl Parkway, while Arrosta will be located in the neighboring Oxbow Building at 1803 Broadway. Both are slated to open this fall.
The team will offer a preview of upcoming restaurants during a pop-up on August 10 in Maverick. Tickets cost $ 50 per person and include four courses: antipasti, pasta, main course, and dolci. Additional food and wine pairings are available for $ 25.
